The pasta is extruded through a bronze die creating a rough surface on the exterior of the pasta, so your sauce will cling to the pasta. Gragnano, located between Monti Lattari and the Amalfi Coast, has a warm climate with regular sea breezes that have historically been used to dry Gragnano pasta outdoors. Recognized as a Protected Geographic Indication, pasta from Gragnano must be made from Italian durum wheat semolina, local spring water and must have a protein content of at least 13% to maintain the chewier bite characteristic of this pasta.
